We made a quick pub fondue from the recommended book when we bought the fondue pot and used the griddle to make little cubes of steak for dipping, it worked great and we will be using it a lot more in the future. Small grill pans are ideal for searing steaks or reheating other ingredients, the heating element used in the pan is above it, just like on the cooking grate. The pan is perfect for large groups or when one child wants medium and everyone else prefers medium. The pan and griddle have individual temperature controls, but the griddle surrounds the pan so I believe there is some heat transfer as the bottom of the pan seemed hotter on the cheese near the griddle. While you are eating the cheese, you must turn the temperature down as the temperature quickly gets too high and the cheese can burn. Once it falls below the minimum line, reduce the temperature of the pan completely. Note: When this is plugged in, it is on, there is no "Off" option, only "Low". Tonight we're going to try it for a hot pot. I will update my review if necessary.
