I often use peel from citrus fruits (lemon, grapefruit, orange, etc.). This zest cuts through the lemon zest like butter. They determine how deep the punch should be, usually not too deep to avoid the bitter core. And because the peel is so beautiful, it goes well with any of your recipes. The plastic lid is not that important to me. But the brush is great for cleaning the cester. The handle makes it easy to hold while moving fruit. There is a rubber ring on top of the cross member. This allows you to simply lean the zester against a surface (table or cutting board) while you work.
