The knifes are so sharp you really have to be careful when cutting as a careless error can be awful. Both knives have a good weight to it that is well balanced equally between the handle and the blade. These knives need to be hand washed and never washed in the dishwasher. Washing them in the dishwasher can decrease the quality of the knife, damage the blade edge and reduce the stainless steel integrity. I typically wash by hand and let air dry before storing but the instructions say to dry them thoroughly before storing to prevent watermarks and spotting. I'm very pleased with these. They cut better than any other knife I've owned.
