Do you really need another 5 star rating to convince yourself that this egg bite mold is the best thing you've ever bought for your pressure cooker? OK, here it is. I was looking for a copycat sous vide egg bite recipe from Starbucks and almost convinced myself that I need a sous vide stick when I can find the recipe using IP/PC and an egg bite mold. Who knew there were so many shapes to choose from? I searched and looked and looked and looked and settled on the Hatrigo egg bite mold. I couldn't wait for the package to arrive! Well actually I could... I delayed arrival so it could be packed with another purchase. When I saw the package I opened it immediately. I read that some people complained about the smell. It had an odor when I opened it but I put all the parts in hot soapy water and it removed 90% of the odor. The slight odor that lingered honestly didn't bother me. And I wanted to make Egg Bites! I put three drops of olive oil in each cup and brushed the inside of each cup very lightly. After pouring in the egg mixture, I placed the mold on the stand provided. Let me pause to say that the coaster that comes with two egg molds is perhaps the best in the entire purchase! My pressure cooker manual says it came with a metal stand, but I have no idea where it is. This stand is the perfect size for my computer. love the pens. I love how they fit on top. I can't say enough about the coaster, it's like getting a bonus with two shapes! Speaking of forms, I want to put the form on a stand and then fill it out. Because it's silicone it's a bit flexible, but I found that if I firmly gripped both sides and pulled out a bit, it gave the mold a bit of support as I moved it to the stand. The silicone lid fits perfectly over the mold. After reading so many recipes that called for aluminum foil to cover the pans, I'm glad I went with the silicone lidded pan. I don't want to waste all the aluminum foil. The stand provides sufficient support when inserting the molds into the pressure cooker. The egg slices are perfectly prepared according to the recipe I chose. Now we come to the actual test, right? How well do these egg pieces come out of the mold? Let me state that I absolutely hate sticky foods. I don't want to think about how many frying pans I've ruined in my desperation by attacking sticky food with sharp objects. But these egg bites slipped out! I have several silicone pads and to be honest some I would trust if it wasn't for a bit of lube. A few drops of olive oil is a fair price for quick egg bites. Maybe I'll try it without lubrication in the future. I don't think this will be a problem. I already want to buy these for my daughter who has the official Instant Pot. I also want to explore other things I can make in these pans like mini cheesecakes! This will be a kitchen accessory that I will be making lots of use of!
