Tofu is new to me. I didn't press (hard or very hard) at all, but after reading a few recipes I decided to do it. I tried the paper towel and heavy pot method which looked like a long and messy process. Hence this purchase. It holds the tofu well (not as much liquid comes out as I thought it would), but I can't pinch all 4 sides. It also seems that these clamping sides will eventually break. So ultimately, I'm not sure I'm getting as much fluid as I can. It's a good design, but not entirely satisfactory.
