It disperses heat well and keeps the coverage good. Stove (16k BTU but to be honest I usually set it to low or mid frequencies). It's just warped a little, and I just flip it around a bit so it lays flat. I got the same mileage with Fully Coated Stainless and Calphalon William Sanoma Elite Nonstick (I recommend both). I only use wooden, nylon or oxo-silicone spatulas. Metal Utensils A note on Calphalon - I only recommend Elite - as for me the lower versions lost their plating pretty quickly. OXO is much better than the T-Fal series but comparable in price. T-Fal lasted about 6 months before losing coverage.
