I have noticed that some of my flour has become a bit lumpy after some moisture. The flour wasn't spoiled, so I decided to save it. After sifting, I notice that the flour has become feather light and the cookies are fluffier than usual. Since then, I've combed through all the recipes that call for flour. The sieve is good, I think, a Chinese copy made by my mother. It is easy to use and clean. No kidding - try sifting.
