The quality of the materials gives this Matfer product a 5-star value for money. For many years I have been using Chinese cap fine-mesh filters to speed up the clarification process of raw materials. It's only the second I've had to buy in 25 years. This mesh absorbs the stress and flexing that occurs when solids are pushed against it to force liquid through. Heavy gauge wire around mesh body provides protection from excessive bending. They do not replace the usual wire stand as they do not keep the sieve at a sufficient distance from the sieved product. I also like the Exoglass top and grip for its durability and non-reactive properties. I would use either a meat grinder or an immersion blender to puree the cooked foods. The fine mesh only works well with tambour-shaped Tamis sieves that push food through with flat scrapers.
