I have two of these that are great for making mini cheesecakes for the crowd. I've modified my recipes to match 2 8-ounce cream cheese "bricks" and this is perfect for two pans. However, the most interesting thing I've found is that you can split an Oreo (choose your flavor!) in half, flip it cream side up, and it's a perfect "crust" you don't have to . ! This makes the cheesecakes very strong! I spritz Pam on a paper towel and brush it over the sides before baking, but you don't have to do the bottom and I'm not even sure the sides really need it, but they definitely don't need a heavy spray. . Always a hit at events!
