This pan was purchased to sear steaks. I already have a Weber grill with thick iron grates, but when the heat and flames get past the heated grates, my large cut steaks cook unevenly. So I started learning how to cook sous vide bu in water using vacuum bags. This method cooks the steak to an even temperature throughout the steak. But the steak looks like a rough, rubbery brown, but the inside is red for a steakhouse. So what magically turns that piece of meat cooked in water in a bag into an expensive steak is the final roast that forms a delicious crust on the outside. This Nutrichef is a cast iron reversible pan with two different sides and large handles. The handles are important as this is a strong and heavy pan. So much for carrying from the kitchen to the grill. But what's even more important is the ability to flip this pan over to switch from the grill side to the flat pan side. This allows me to get those grill marks first and then use the flat side with some oil/oil mix and brown the top and sides. This frying pan has deep grooves all along the inside to catch cooking oil and meat juices. The box includes a hardened plastic scraper with grooves cut to match the grates. I can use this to clean the pan. The pan comes with detailed photo instructions explaining how to prepare and season the pan with flaxseed and how to salvage or repair a surface that hasn't been used for a long time or has started to rust.
