This is a must-have accessory for your Presto Cannery

I am able to produce hundreds of cans a year and also teach a few courses and have been using this sensor for about a year as an alternative to dial gauge testing as my local expansion offices no longer offer this service. I have a #01781 Presto 23-Quart Gauge Autoclave (Presto 01781 23-Quart Pressure Canner and Cooker) that only comes with a 15 lb canister. One piece regulator if you buy it new. I spoke to one of the Presto economists this morning and she confirmed that you *can* safely use this three-piece weighted regulator with a 23 liter dial can, provided you stick to what the weighted indicator dial tells you it you. They don't consider it safe to use this to test or test your dial gauge, but you can use it instead of relying on an untested dial gauge. So if you bought a publicly available Presto 23 liter can gauge but can't find a source for local testing, this is a good option for you. Just remember to judge your pressure by the oscillation of the weighted manometer, not the pressure reading you see on the dial - the dial can be wrong! For those looking for more details on how it works, this load is in three parts. The centerpiece equals 5 pounds of pressure and the two rings weigh 5 pounds each. So if you can with a typical pressure of 10 pounds (or the 11 pounds recommended for dial gauges), use the black handle center with either ring on it. If you can can 15 pounds, you should use all three. Please note that recommendations for adjusting your handling for high altitude are different for weighted gauges and dial gauges (since you can only climb in 5 pound increments with a weighted gauge), and call Presto or your local branch office if you have questions about doing it safely. It's a pretty basic product so I don't have much else to say about it other than that I find it easy to use and easy to maintain. As others have said, helpful if you're having trouble keeping the print right where you want it; I find it less complicated to use than dealing with a dial indicator. Since I haven't fiddled with the heat on the stovetop as much, I can do other things in the kitchen while waiting for cook time and be sure the pressure matches the sound of the weighted gauge. than looking at him all the time. If you're buying a 23-liter tin can, this is one of two accessories I think are essential - it's worth spending about $20 extra to buy that and an extra-flat can stacking rack.
