I use an 8" Dalstrong chef's knife myself and when my mother-in-law had the chance to use it she was blown away by its sharpness. She used the knives that came with the kit. After she left, I bought her an 8" Bravedge chef's knife because it's so cheap but still has pretty good reviews (Dalstrong was too expensive to give away). I was very impressed with the sharpness of the blade out of the box. I did a paper test and it cut through the paper with no problem. Sure, it's not as sharp as the Dalstrong, but it doesn't cost more than $100 either.
