The thermometer is set to the type of meat to be cooked and then to the desired degree of doneness. When the set temperature is reached, the alarm will turn off. A note: if you're roasting meat at high temperature to start the process, wait until you've lowered the oven temperature to cooking temperature to insert the probe. Otherwise, the probe may be damaged by high temperatures.
