I've always used nonstick pans, but I know they can contain unwanted chemicals, so I'm trying to switch to cast iron and stainless steel. Cast iron is very heavy and difficult to maintain, but I was afraid of stainless steel because I thought it would stick. I'm learning that the key is using the right temperature and cooking style. This is a good overall set with a wide range of sizes. It's a good weight, not as heavy as cast iron but not as light as cheaper pans either. They are convenient and easy to use. Cleaning is easy as I don't have to rush to scratch nonstick surfaces or be careful with cast iron. With this I can rub them and not worry about the damage. Now that I know how easy it is to use stainless steel I won't be going back!
