You can control the slice thickness without adjusting the wire.

This is so cool. The last cheese knife I had was handy and cumbersome. It cuts all the way through so you don't have that silly bit under the cut. It is durable and easy to clean. It would make a great gift, just add some cheese and sausage, maybe some wine and it will be perfect.
