Good working knife, best in kitchen and dining room

Misono 440 is a great knife. I work in the kitchen of an average hotel and this knife rips through all food cooked. Doesn't get quite sharp (most Japanese knives don't), but a few smacks on the 6-karat stone will fix it instantly. The edge retention was very good. Used it all day and still has factory sharpness. Very light, with a large handle and beautifully swinging.
