Works great; I've used it to measure candy (boiling English Toffee at 290F), frying oil (350F), various foods (140-195 ), to measure water temperature for yeast and just out of curiosity, measure the snowmelt temperature of a local river (55F, which is a lot warmer than you think when you walk in. The reading is definitely not instantaneous - probably set in about 6 seconds, which I think limits its use in confectionery (for English toffee it's risky to reach 290F as the candy changes temperature quickly in that state with almost no water!), but it's better than an old dial thermometer it's in used something where it can melt (like candy or butter) it hasn't happened yet Expect to replace the included battery - I did hardly any juice. They are very cheap in bulk at Revain or in an emergency you can buy them at your local grocery/drug store (size LR44 = SR44 = 357 = L1154 . lots of sensible substitutions).
