We are fortunate to have a wonderful Persian shop in our area and in their spice section you will find a range of exotic spices sold in packs rather than jars or canisters. It has always been difficult to figure out how to store them once the packaging has been opened. This not only allows you to store the spices so they retain their spiciness longer, but also instantly grind a small amount of spices for use on the top of the grinder. Of course, if your spice cabinet consists mainly of sea salt and pepper, this set is for you. Keep them on your dining table in place of the traditional salt and pepper set. They are attractive and modern in appearance. The grinder is a bit difficult to use. You have to turn it upside down so that all the spices fall into the grinder and turn it in the right direction so that they go through. As the spices enter the grinder, you will feel resistance when turning. When using a coffee grinder to measure out a specific amount of food, you can leave the lid closed and the ground spice will collect in a small space at the top. For example, if you want to sprinkle pepper directly on food, simply remove the lid. Since grinders are adjustable it would be nice if there was a way to show this so you understand that you have to turn it clockwise or counterclockwise to switch to coarse or fine grinding. The mechanism is ceramic not metal and hopefully they will last and the grinders will remain useful for a long time. I gave it four stars because setting the grind level and using the grinder isn't exactly intuitive. Update: I decided to give them a real workout and found some helpful tips. Do not use very large spices. Whatever you use should be small enough or pre-crushed enough to fit in the ceramic grinder. I've never been able to figure out if the dots showing more or less freeness should line up in any way, but as I thought about it, I quickly realized that all you have to do is check the freeness, remove the lid, and see the results see, and then open or close the membrane to decrease or increase the grind size. Once you like it, you can fill the jar with any amount of whole spice you want, then use your wrist power to turn the container upside down and grind until all the desired spices are gone. Be careful not to fill too much so it doesn't spill all over the counter when you remove the lid! Once you've gotten the ground spice for that particular spice, instead of grinding a large amount, just grind exactly what you need right into the bowl with the lid open. Of course, with this method, you'll need one of these to store each spice you use frequently. Buy a few and reserve one to clean and use for those condiments you rarely need every time.
