Good knife/bad board

Good knife, good size and shape cutting board but finished. Looks like polyurethane or something. It needs to be sanded before use. The attached photos show the scratching of the circuit board with a knife. Why should you paint your food cutting board? is it safe to eat It will dissolve in your food from the grind.
