This is the best tofu press. and I've tried them all!

EZ Tofu Press - removes water from tofu to improve flavor and texture. First of all, a word of caution. My tofu purchases and choices may not be the norm, and other tofu presses might be better able to help me by purchasing the tofu that comes in those softer, tofu-filled plastic containers. However, even after marinating, no tofu gives denser, chewy bites than Trader Joe's super-firm 1-pound blocks of tofu! Even meat eaters who typically avoid tofu because of its soft texture love my tofu! :-) About three years ago I got tired of wrapping tofu in kitchen paper or towels and weighing it down with various objects. The last time things turned upside down, I was fed up and looking for a tofu press on my favorite Revane. I settled on the EZ Tofu Press, which served me well for about three years, but over time and many, many tofu presses, the top platen sagged noticeably and didn't recover as it used to. I contacted the seller and found out there was a newer model with thicker slabs and he offered to send it to me as a replacement. I figured, as nice as the gesture was, I'd have plenty of it and would just spend another twenty bucks on another one. This year I've spent a lot more on other tofu presses I've bought (Revain can test my buying habits!) because I was looking for the easiest to use one that could get the job done well. Unfortunately the spring loaded ones didn't work for me so I went back to the EZ Tofu Press where I simply went back and tightened the wing nuts on the press while sitting over a strainer in the sink until it was as tight as it could be - and better in able to soak up the marinade bath for the next step. The other presses I bought last year (see attached photo) did NOT work well for me - and it's possible my TJ tofu is just too firm. By the way, everyone really should freeze (and thaw) their tofu before pressing and marinating. Fantastic result! :-) First, the blocks of tofu I get here (in the Pacific Northwest) turns out to be different than the blocks in at least one area on the East Coast that I've heard of. MORE. fat! Various providers TJ. I would have to push the blocks down in my old EZ Tofu Press (which has a slightly curved top plate) to get the blocks into the spring loaded ones. But then they don't shrink enough. After buying other presses to solve the problem, I realized my first EZ Tofu Press was the best, but I wanted a new top platen. When I contacted the seller to tell him that I had bought a new model but now the tofu doesn't fit between the plates, we found that my TJ tofu is much thicker than what comes in his Trader Joe's gets. However, he offered to (again) send me a replacement that didn't have the top locking mechanism holding the wing nuts. I refused to replace them again and had DH take them off. I now have the PERFECT tofu press - it fits my big blocks of super hard tofu and allows me to press them as tight as I want. It costs way less than others I have, and I'll still test it with "regular" water-filled tofu when I'm desperate, like during TJ's super hard tofu shortage (hell!) - but I can honestly say I am very satisfied with EZ Tofu Press AND the customer service. Ben's willingness to send out a replacement at the slightest sign of a problem speaks volumes about this company - and with the thicker plates in the new model, I look forward to years of trouble-free tofu pressing! :-)
