I have a small deli in an industrial park and I bought these to replace the same sized ceramic skillet I bought at Target. Why did I buy a different pan? 1. Ceramic becomes very difficult to clean when you use candied ingredients like BBQ sauce! I've even tried professional pan cleaners and I still have that horrible brown ring (which was around the shape of the heating element underneath)2. Cleaning ceramics was sooooo!3. The grease trap was too small and difficult to empty, resulting in the expense of hot oil gloves professionally fitted to the Hulk. My "heavy" use: - I use this pan at least 3 times a week. - I cook all my chicken breasts, bacon, roast meats, eggs, tortillas, etc. with great success. What I like about this device (after 15 uses): 1. Legs detach easily! That means I can unplug the power, unplug the legs on each side, and run the entire unit (even the one covered in bacon grease) under a hot water faucet for a few minutes, and everything will be clean. I have NOT had to CLEAN this unit yet! I run super hot tap water into the pan and wash both legs in a tub of hot, soapy water. For those who do so much cleaning every day at the deli, this minimal cleaning is a HUGE bonus! Grease Trap: While this grease trap won't necessarily last any longer than any other brand, the leading edge on it allows it to be safely removed without the need for heat resistant drain gloves. THIS IS AN AMAZING JOB! especially when cooking up to 40 pieces of fat per day! With my previous $60 ceramic device, I had to wear protective gloves and couldn't move more than 8 inches or so to dump the super hot grease (mainly because the other grease trap/bowl was wider and shallower than this one)). one and had a very small handle at the front. 3. The cross ribs on the surface look weird at first, but I haven't had any problems. The texture of the pan top is odd, but I haven't had any problems. I've used it many times to cook chicken breasts and bacon, and have even "cooked" breaded goat cheese slices with ease! in the fat drawer. Note that my kitchen utensils are heavy duty and restaurant quality, so I can't speak to Jane's basic spatulas or anything like that. The unit is cold, I just separate the legs, place the legs in our tub of hot, soapy water, and let the ex-fat drain out of the hot water spout on the grill pan. I make sure to dry my feet after washing to make sure they don't rust, although I don't think they will. That's how we do it in gastronomy. What's missing: Honestly I have no complaints, but if I were the engineer of this project I would include the ability to adjust the height of each of the four "legs". This is my problem because the stainless steel surfaces in our deli are very old so when I use it in a regular deli the oil flows to the back instead of to the grease drain in front. Again, this is my problem, not the product. Yes, I could put risers on both lower legs, but honestly it's best not to as it lets me know how much fat is being produced and how often to empty the fat pan. Again, this may sound like a minus, but with the use of a different ceramic block for multiple blocks, it's gone out of sight, out of mind, so it's actually a plus for me. With my old unit I can't tell you how many times the grease tray overflowed and I didn't know until I saw or heard it drip and it was such a mess! CLEANING: Remove the bits and simply run a full slab under hot water for a while, then use a cleaning brush (non-stick) and you're done! Wash your feet well with hot, soapy water. Let dry. So easy and I can't get you to understand the importance of easy cleaning on this unit. That is the difference! HEATING AREA: 1. OK, so the heating towards the heating head is stronger than towards the end of the heating coil below. However, this doesn't detract any more than any other device I've used, even the ceramic device is $20 more expensive than what I bought. This is not a problem with bacon, because the cooler side gets hotter when you turn it. When it comes to chicken breasts, learn how to place the thicker part of the meat on top of the coil below and the thinner end of the breast toward the center where there is no heating coil. With this device I didn't have to change my cooking style at all compared to the more expensive ceramic version. GENERAL: I just couldn't imagine how disappointed you would be with this device. Again, I use it in a professional kitchen and it far exceeded expectations. I don't expect to have to replace it for many years!
