Great little blade for your kitchen arsenal. Don't hesitate to buy again.

The thing is perfectly sharp! So it's balanced too. You can't tell from the photos, but the handle is larger than I expected and offers a more secure grip. You have the working end of the blade toward you, and you press and guide objects against it with your thumb. Another option is the usual de-stemming or pruning, and sometimes quick slicing, of spring onions or shallots with a regular knife. This knife is superior to all of the above. The handle fits comfortably in my truckosaurus hands and has nice texture to keep it in place when wet. This is a little workhorse. I have a 10 inch Dexter chef's knife that I use for my fine butchering and slicing and now I have a little helper to do the rough and the fine work. The 10" Dexter holds its edge well despite all the abuse I've put it through (hello dishwasher) - in fact, it outlasts most of my more expensive blades. This little guy I assume will do the same.
