Sodium bisulfite was what I first looked for because I own a botanical shop and sell dried orange and apple slices for craft purposes (not for consumption) With bisulfite I would have to dry two orange slices for whole days and sometimes more and apples for a day. I chose this product, Sodium Metabisulfite, and am so glad I did. My fruit pieces dry twice as fast and are drier, which is great for resale. Orange slices only take 24 hours or less and dry that well, and oranges are one of the most difficult fruits to dry. Apples also dry out in less time and are drier than other foods. I just soak them for 5 minutes, then rinse them well and I'm ready for the fruit dryers. Definitely try this stuff, not sure how it would feel if you wanted to eat the fruit, but for craft purposes it's great.
