I bought a Kyocera chef's knife (which I really like) to replace a cheap mandolin. Not enough space to cut a tomato for a steak. and although it's sharp, it surprisingly doesn't slice tomatoes any better than the stainless steel blade of a cheap mandolin, and because it's not adjustable, the tomato slices come out too thin. Might work for other veggies like carrots or zucchini, but slice thickness can be an issue. I don't expect a julienne blade to be any better.
