Wilton: Disappointment.

Received these pans as a gift from a friend who appreciates Wilton products. I've complained for years to anyone who'll listen that it's become impossible to find strong, medium-sized, well-made bakeware (cookie tins, jelly rolls, muffin tins) that won't warp in the oven. While warping during baking isn't a huge problem, if you're trying to bake a (smooth) tender cake, or if there's sauce or icing in the pan (baked meat), you'll either get a crooked bake or a hard to cleaning oven dirt. Baking sheets that warp when heated will usually return to their correct, undeformed shape when cooled, but having them warp during cooking doesn't help. Hence my search for the "undistorted pan". Unfortunately Wilton is not the same. Because of their reputation, I was so happy to receive this set that I washed it and used it for dinner that night: Baked Salmon. The pan was so warped that the maple mustard glaze threatened to leak out at one corner. The fact that this did not happen is more due to a small amount of glaze and not to the stability of the pan. It was the smallest pan in the set. I expect the other two, larger pans to behave the same way. I believe they will suffice for baking cookies, but I plan to keep looking for a casserole dish that works well, is useful for cooking a variety of dishes, and won't break the bank. PS Yes it is. relatively non-stick, although I lightly oil the pan before grilling the fish. The pan washed out with no problems. I would use parchment paper for baking cookies.
