I switched from my 20 year old Henkels Pro S to a Mac Pro MTH-80 last year. I bought a King 1000/6000 combo stone for $30 and learned how to sharpen it by watching YouTube videos. The 1000 grit king cut fast, cut slow, and produced thick, dirty shavings composed of as many stone particles as knife particles (not good). This made the knives sharp, but it was difficult to pick up a permanent burr. After spending a shameful amount of time researching stones (I don't have a life), I decided to buy the Chosera 800. The Chosera came in the mail today and I immediately tried it on my Henkels and Mac Pros. The difference between Chaucer and the king is day and night. First, Hozera is noticeably denser. Without a doubt it will last a lifetime. It's a real splash and go. I wet the stone and started sharpening. Chaucer is a faster cutter than the King. I was able to lift a permanent ridge in less than a minute on each side. The stone feels much softer than the king. This stone was much easier to sharpen with excellent feedback. I would recommend this stone to everyone, even beginners. Too bad I didn't buy it first instead of spending a year learning how to sharpen a king. Chosera is much simpler and gives better results.
