Better than my old knife, this knife works quickly and efficiently, slicing a thin layer from the top. I've used it for carrots and potatoes so far with no problems. My old one will twist and warp and is difficult to clean quickly and so far this hasn't had that problem. I've used the tool above on potatoes a couple of times and it's fine, nothing special. I clean it manually and for the most part it's not a problem either.
