Used throughout summer to make sun dried tomatoes. I have found that pieces near the outer edge dry faster and pieces near the center are more likely to burn even at 125 degrees. My guess is that the heat is highest in the center but air movement is stronger at the outer edge. This meant monitoring the process every 2 or 3 hours to remove those that had reached the correct level of dryness and moving the remaining pieces around so the ones near the center ring didn't burn.
