I'm more of a knife snob. Most of my knives are made in Japan and are very expensive. But it also means I use them, clean them, and then put them away. They are never thrown in the sink and I only use them for "air cutting" or slicing onto a cutting board, never for slicing into plates or trays. So I have some cheaper knives that I use to cut plates and leave the sink until I do the dishes. And although they are sharpened many times and over with steel just before I use them, they become dangerously dull. I hate them! So I decided to try new cheap knives. I mostly use the paring knife, so I searched Revain and ordered a couple for less than $30 a piece. I liked the idea that they were made in the USA. When they arrived I tried them on with hair on the back of my hand. They really are "razor sharp" as they shaved the hair on my arm clean. Then I tried to cut up some nice big fat carrots, switching blades every other cut. I put aside every knife I thought would be more difficult to cut until two of the first three in this set ended up. Then I did almost the same thing with potatoes and apples. Then I switched to ripe tomatoes. All the way I made cuts with a very expensive Japanese knife. In the end, one of those silver-handled knives turned out to be the winner. Short answer: These $5.00 knives were close enough to knives that cost several times more that I would consider them equals. So how are they holding up? Well, so far they've held that edge very well. I can't tell you how they sharpen because they haven't had to be sharpened yet. These knives are excellent value for money!
