I have a DCS gas range with large burners. I think they are 14000 or 16000 btu. Each burner has a boiling level and the flame is fairly weak. However, after a few minutes of cooking, it still starts cooking at a speed that is too high for me. It doesn't matter if I use stainless, enameled iron or cast iron, I couldn't get a nice slow cook. With this diffuser I can set the burner to a slow simmer and get a very nice soft simmer throughout the pan. A small pen is also good. There is a ring on the underside that dissipates some of the heat towards the middle. The rest heats the rest of the oven. Like I said, I get a very slow simmer throughout the pan. That's great.
