When baking, I like to use a product called Baker's Joy, which is a spray that can take the place of greasing and flouring a pan.Since this will be used primarily for quick cakes, I'm disappointed that I won't be able to use that or any other spray oil like Pam. For whatever reason, you can't use them on this never stick item. Back to greasing and flouring.Like most non-stick surfaces, you can't use any metal utensil. A word of caution, never loan this to anyone, or let guests cut a piece of cake from it, or cut anything in it. They will scratch the pan with their knife. That's happened to me with various cake and quiche pans more times than I can remember.It's very well made. It isn't a lightweight pan. It has a nice professional heft to it. There weren't any spots where the bottom burned, like there can be with some flimsy baking pans.Hand washing is recommended, and here's another thing I'm not crazy about. You can't let it soak. Who wants to clean a pan right after having a nice meal and sitting down relaxing? But once again, that's the case with a lot of this type of bakeware, so no points taken off. If you want to soak something, use glass or certain ceramics.Hope this helps you to decide if the investment is going to be worth it for you.Happy baking!
