This 5" Dexter-Russell Skinning Knife is ideal for butchering deer, small game, speckled trout or red drum. . Keep it sharp and just let it do its job with a little pressure or effort. Much better than a fillet knife as it's the right size for working with fish, the size you keep for eating. Slide it along the ribs and the fillet becomes so light compared to a filleting knife. The only flaw I can find is the finish on the blade and the handle is unfinished but needs some handle lube. Mineral oil or Chicago cutlery oil seals the pores in the wood and requires a light buffing with fine sandpaper before the oil is applied. The blade seems to have a rougher finish than the fine polish found on many other knives, perhaps read this and step up their quality control.
