My wife and I own a successful dumpling business and have been using these presses for 3 years now. With these presses, we produce an average of 60 to 100 dozen dumplings per day (we line them up and roll them out two dozen at a time). They work great. We sprinkle and flour the shells every third or fourth pass to keep them from sticking. We just replaced two cracked trays three years ago. The only reason I didn't give that 5 stars is because they are made of lightweight aluminum and can crack. When we first started making dumplings we used a press that my parents used before I was born. This is a much heavier cast aluminum or steel. After looking everywhere for the same one, I finally called the maker of the original in Pennsylvania and found out they no longer make them. They have been serving for at least 40 years! In any case, they are of good quality and we have made thousands of dumplings from them. They greatly simplify the process and make it more efficient.
