When I'm making a soup, I like to chop the ingredients fine enough to distribute them evenly, but electric choppers tend to cut them too fine. This knife cuts them exactly to the desired size and very quickly. I find the swinging motion of this knife very comfortable to use. The blade is very sharp, so as with any sharp knife, be careful where you place your other hand and your fingers. The knife comes with a protective cover. This protects the edge of the blade from being cut or blunted by other tools in the drawer and protects your fingers when sorting in the drawer. Keep it handy and use it when you're not cutting with a knife. (It has to be said: wash your knife IMMEDIATELY after each use and put it in its protective case.) This is a very useful tool that deserves a place in every kitchen.
