With beef prices soaring these days, I took a butcher's advice and started buying whole beef fillets from the local stock club. The price for a whole loin as of 5/24/20 is $9.99 per pound. If I bought it in individual packets it would be at least $5 more per pound. However, it takes a very sharp knife to cut through such a thick loin. I searched several products and settled on the 6" Mercer Culinary Millennia Curved Boning Knife. As you can see in the video, it slices through the fillet like a hot knife through butter. Surprisingly, this knife didn't have a sheath. I'm disappointed that I have to order one separately This is not the knife you have in your kitchen drawer however it is very sharp and works very well.
