Better than a brick for a great crust

I am an avid baker and wanted to improve my bread. I bake 2-4 times a week using a dutch oven or regular challah tray. I've used brick before, but it's brittle and doesn't give the desired effect. I came across Backstahl on YouTube and decided to give it a try. Dough-Joe baking steel works much better than brick. I've made pizza 5 times and the pizza comes out crispy. Depending on how much filling is in the cake, it will take 3.5 to 7 minutes. I've made baguettes and loaves of bread on steel and it works fantastic. I plan to buy another one for my relatives. This is how I use it for pizza. I move the rack to second from the top and preheat at 500F for 30-40 minutes. When I'm ready to bake pizza, I switch to the highest frying level. I place the pizza along with the bell and let it cook for about 3 minutes, then flip quickly. It usually takes about 5-6 minutes to cook. My kids love to overload pizza so it can take up to 8-8.5 minutes piling it all up. For bread I heat it to 500F. When I'm ready to bake the bread, I lower the temperature to 400 and place a saucepan with 2 cups of water on the bottom shelf. The water creates steam and helps the bread rise. A loaf made from 3 cups of flour will bake in 30 minutes.
