Barking Brisket

Although I have been able to achieve the desired bark with my trailer mounted smoker, it is not practical to light it to cook a single brisket. I have an electric smoker that works well for small smoking projects, but I was never able to get the bark I wanted. This pink butcher paper changed everything. I removed the breast at 160-170 IT and wrapped it in butcher paper, then put it back until I had it at 190-200 IT, then wrapped it, re-wrapped it in cling film and an old towel and then let itโ€ฆ

STOP, STOP, STOP With foil!

I have to say I thought I smoked one hell of a brisket but I was never happy with the result of the rind. What I liked best was wrapping the brisket in foil at 160 degrees and returning to smoke for another 3-4 hours. The bark should be fragrant but slightly rough and fall off easily. I read on a pit master's website that unwaxed butcher paper can be used in place of foil as it allows the fumes to escape rather than being held in place like foil which destroys the crust. I ordered and triedโ€ฆ

Brown Butcher Kraft Paper Roll

I bought a brown butcher kraft paper roll to use as shipping paper for my small business. The paper came on a durable roll designed for easy handling. I don't have this setup but I would like to have it because it would make using this paper very easy. So far I have used this paper to wrap small boxes and it has worked great for that purpose. The paper isn't particularly thick, but since it's construction paper and not gift wrap, I can't argue with that. Overall I'm happy with my purchase: theโ€ฆ
