I bought an Ontario - Old Hickory 7-7 7" carbon steel butcher/kitchen knife in November and have been using it for a few months now and I can say This is my go-to for anything that requires slicing or carving. It cuts veggies easily and processes pork chicken and fish quickly. Carbon steel knife. It was fairly sharp and has a decent edge. I cut paper fairly easily considering Because it is carbon steel, you should hand wash this knife and dry it thoroughly after use, and if you really love your knives, rub the blade lightly with mineral or vegetable oil for added protection over a longer period of time in a damp environment Surroundings (and it's no good for a wooden handle either.) It's a no-frills knife, but that doesn't mean you like it should handle whisk. As I said, I use this knife for almost everything in the kitchen and I am very happy with my purchase. The only complaint I have is that the rivets seem to have come loose. Eventually I might take them off and tape the handle back together, but until then that's no problem.
