This is not a Fibrox knife but I kept it anyway

This is a classic Granton knife, not a Fibrox. I thought the photo was wrong but in fact the products are also swapped between this and the classic listing. Pretty boring. Also the lame thing is that Victorinox is not doing anything about it. Now to the knife. It's very light, which makes it look cheap. The scallops don't reach the tip of the blade so the food will still stick, albeit less. But it is very sharp and cuts very thin. Why did I keep it? I have had an 8 inch Victorinox chef's knife…

Great knife for the price

You won't find a better knife under $100 and you won't find much under $150. It's not nice. It's not trendy and it doesn't hold a blade as well as a top-of-the-line $200+ knife, but that's unreasonably to expect at this price point. If you're looking for an everyday knife that will do "everything" in your kitchen, I bought this one and I'm incredibly happy with it. It cuts through tomatoes and thick meat with ease and precision. The handle just feels "accurate right on". Apparently, but they do

For the price there is nothing better.

Purchased in January 2011 on the recommendation of a professional chef. He said it's good by professional standards but a lot cheaper than most. My magnetic knife rack is overflowing with knives, Henckels, Sabatiers, etc. and more in the drawer. My wife won't let me buy anymore until I throw something away to make room. But this Santoku (sixth from left) is my go-to "running" knife. I use it and a 4" paring knife for almost everything except when using a 10" meat grinder (same Victorinox…

Great for Root Crops

When I started my life in grad school, I made the decision to take cooking more seriously in order to eat better and save money. A functional kitchen starts with quality cookware and a good set of knives; To that end, I considered buying several Victorinox knife sets: Victorinox 46892 Fibrox 3-piece chef's knife set, Victorinox 8-piece knife block set, Victorinox 7-piece knife block set, Victorinox Swiss Classic 15-piece cutlery block set. I eventually found that with Revain's heavily…

Good blade steel, good budget knife

I bought this knife based on the rave reviews. I honestly feel a bit cheated. The knife looks cheap. It looks like a dollar store knife. The pen feels cheap and too small for my hand. On the plus side, the knife is very sharp and has retained a good edge. The blade steel looks very high quality. This knife will be my main kitchen knife that I will be cooking with 7 days a week / 365 days a year (we don't eat out in restaurants) so it's going to be quite a while. I plan to update my review after

Why this knife? $20, $40, and $100 knives

Santoku is my favorite style of knife. I'm not going to talk about knife style, but rather compare the average Victornox knife to low and high end knives in the Santoku category. I've found that there are generally 3 main price ranges for santoku knives: $20, $40, and $100. I have the following Santoku knives from each $20 category - Chicago Cutlery & Kleve; $40 - Victorinox; $100- Avoid. Summary/Conclusion: This Victorinox knife is probably the best choice for most people and by far the best…
