Review on ๐Ÿ”ช 7-Inch Victorinox Swiss Army Cutlery Fibrox Pro Santoku Knife with Granton Edge by Cynthia Smith

Revainrating 4 out of 5

Good blade steel, good budget knife

I bought this knife based on the rave reviews. I honestly feel a bit cheated. The knife looks cheap. It looks like a dollar store knife. The pen feels cheap and too small for my hand. On the plus side, the knife is very sharp and has retained a good edge. The blade steel looks very high quality. This knife will be my main kitchen knife that I will be cooking with 7 days a week / 365 days a year (we don't eat out in restaurants) so it's going to be quite a while. I plan to update my review after using it for a while. Perhaps my opinion of the knife will change over time. 3 stars. Edit 2/20/15: Increased rating to 4 stars. I've been using this knife daily for about two months now, and while it seems cheap, it's sharp, easy to use, and overall a decent kitchen knife for the price. I have yet to sharpen this one and it is still very sharp and cuts tomatoes easily like butter. That's a good knife. I need to sharpen it about once a week for best performance. Slices still soft tomatoes like butter. The knife is in good condition, there are no chips or nicks on the blade. This is a good budget kitchen knife that will last for many years without problems. I re-evaluated this knife primarily for its general form and function and low price. I'm not afraid to (lightly) abuse this knife or quickly sharpen it with an electric sharpener, which I would never do with a $100 knife. Edit 11/13/15: I recently learned how to use a sharpener. Wow what's the difference. A few steel strikes and this knife is SHARP. The knife cuts better than new with just a few pulls of the steel each day before use. I still use this knife every day but it's so much fun now because it's amazingly sharp every day. Like the knife. I'm glad I bought it.
