High quality *instant* meat thermometer.
I use cheap thermometers and they are usually not that "instant", they take some time to reach a stable state. By then you will have lost all the heat from the oven/grill. This works and temporarily blocks for a second or less. I haven't tested it for "water resistance" but it should be good. I highly recommend it!
