Not as fast as I had hoped. About six seconds brings it closer, but it can still change a full degree. However, I love this thing! The lid snaps firmly into place like a handle extension and has so far proven waterproof enough to be washed! The hole it makes is quite small which as a side benefit means I don't spill food around the grill trying to get in. The main thing is that I trust! I had to throw away my old cheap thermometer because I just didn't trust it. I would buy it again (or at least start it at the beginning of any re-evaluations). It's a safe bet for the price, easy to clean and use, fast enough. I am picky, bought very carefully and was satisfied.
