Started sharpening a set of knives and went from recommended coarse to fine #8000. However, once I was satisfied and able to do the "Pomato test" or "paper test" I found that I never went back too coarse, just using #8000 to maintain sharpness. I think I could get away with just #3000 and #8000. I tried to feel different grit levels with my fingertip but I couldn't, they all feel the same to me. Obviously I can feel the difference with sandpaper. However, I don't know if this is possible or not. I gave it 5 runs anyway as I was doing the work for myself. I recommend this set for beginners as I am alone. I have added shapton #12000 to my collection, you can feel the difference with your fingertips, but one shapton costs 50% more than the whole set.
