Put the patty paper on the bottom, put your burger on, put another sheet of P-paper on the burger, then press. Adjust the top plate according to the weight of the hamburger you want so that very little hamburger spills out of the patty paper. I like 5 ounces. Hamburgers, so instead of weighing the meat or scraping off excess hamburgers to get nice side dishes, I bought a Vollrath (47139) stainless steel pan - size 6. My patties weighed an average of 5.2 ounces. The plate is built like a tank, and the hamburger fell cleanly from the scoop with a single pull of the trigger. Each number of tray sizes corresponds to a specific amount of product. The cakes after frying reduced to the desired size. No ledges or bare buns to eat. Roasted my 5 ounces for 2.5 minutes per side and delicious!
