Trust them when they say it's sharp

I keep it in the original packaging because I don't want to risk cutting myself. Also, it's too long to fit in my knife block. So now to the point itself. Not only is it flavorful and pungent, but it's also easy to control and cut through roasts and roasted meats. That's why I bought it. I love the Mercer Culinary brand. I have other knives from him and they all seem reasonably priced. I have small hands that can handle it easily. I only made a few fried slices, but I also made slices of salami and a large fried chicken breast. Here's the funny thing: I don't really like chicken, but cutting it so easily and cleanly made it prettier on the plate and therefore a tastier appetizer. It reminds me of Paul Prudhomme being punished at the Commander's Palace for making great food that should have looked better. In my case, the chicken dinner looked better, so I enjoyed eating it more. Anyway, the knife is one thing and I love it.
