I was using one the other day and my oil started smoking and I added some fries to cook and realized something was wrong. I grabbed my digital thermope gauge and the oil was 425f but the thermometer read 350. I wasn't happy, I took another one and it read very close to 425. After reading how to set it, I tested both in boiling water with no adjustment and both read around 210-215 so it's pretty close and accurate. However, I found something was wrong with one of them, so I went to my oil fryer and started heating the oil. I had to set it to 300*, then back to 350*, and finally to 375*. They seemed accurate in low temperature water, but once the temperature got above 300C my readings were way off. I'm still checking now by letting the oil cool and seeing how they react and reading all 25* or so. So don't just believe them in boiling water, in my opinion. Switch to higher temperatures and check. I can pass them on and get a better brand.
