. First I dust it with a little flour so it doesn't stick before I do the trellis (or basket weave). I can make any adjustments without getting a sticky pie filling. I then scrape some water between the overlapping pieces at the edge and put it in the freezer. When I'm ready to put it on top of the cake, I run my cake server under the wire rack to loosen it and it comes off in one piece to flop onto the cake. Wait a while for it to reach room temperature and proceed with the finishing touches. Wonderful!
