It is always better to "harden" the device before first use. I cured mine by heating it over an open fire for a minute and then layering it over a strip of bacon until done. Bacon grease spattered all over the device. I rinsed it, not scrubbed it, and repeated the process one more time before using it for cooking. Aging prevents sticking to the meat.
