Reliable way to cook steaks or chicken breasts

I have three of these, the last one with two probes reading at the same time, even better than previous versions. I sear steaks and then reheat them at 350F until I get medium heat and people tell me they're the best steaks ever. Cook the chicken breasts on low, too, but wrap them in foil to keep them moist.
