Great product for experienced bakers.
Learning how to use this product properly will take time. If you are not as experienced as a baker, this can seem overwhelming at first. Once you get used to it, it will become easier for you. I stopped using ap, pastry or bread flour for this and started using rice flour because bread slides more easily and doesn't absorb rice flour. But yeah, it's not a beginner's tool.
